The journey of La Última Mezcal begins with the meticulous selection of magueys, each ripened to perfection over a minimum of eight years. The demanding harvest yields maguey hearts, which are then baked in a traditional ground oven, ensuring the preservation of the original agave flavor.
The baking process is followed by grinding, performed using a quarry stone wheel powered by horse or mule, to extract the purest agave honey. The resulting must undergoes natural fermentation in knot-free pine wood vats over five to seven days, a process that is never rushed, maintaining the unique character of the mezcal. The final step is a double distillation in copper or clay pots.
